Slow Cooker Corned Beef with Cabbage and Potatoes

Happy St. Patrick's Day!  I don't drink green beer, or any beer for that matter so I decided to make the only Irish meal I know of, Corned Beef with Potatoes and Cabbage, all in the slow cooker.
This is so good, so easy and makes a great sandwich the next day!
What you need,
2 cups of water
2 tbsp cider vinegar
½ tsp fresh ground pepper
2 tbsp sugar
1 large onion, cut into wedges
3-4 small potatoes, quartered
1 small head of green cabbage, cut into wedges
1 3lb corned beef
In a slow cooker combine water, vinegar, sugar, pepper and onions. Place corned beef in the mixture. Scatter the potatoes around the meat. Place the cabbage wedges on top of the potatoes.
Cover and cook on low for 7-8 hours. Yes it is that easy!
A classic Irish meal all in one pot! A little grainy mustard and you are good to go!
Remember to wear something green!
