Spinach Salad with Poppy Seed Dressing


Sometimes you just want a nice big salad for dinner, especially after a weekend of eating out! 


This spinach salad is simple and tasty.  You can change up the ingredients to suit your tastes. The dressing is great contrast to the sweet berries and tender spinach.

For the dressing you need,


¾ cup low fat miracle whip salad dressing
¼ cup1% milk
¼ cup sugar
3 tbsp white wine vinegar
3 tbsp poppy seeds
½ tbsp dry mustard
Salt/pepper to taste

Here is what I put in my salad,
4 cups baby spinach
¼ cup thinly sliced red onion
½ cup fresh raspberries
¼ cup sliced almonds
1 small red or yellow pepper thinly sliced

Strawberries or blueberries would also taste great. Use pecans or walnuts instead of the almonds for a change.

Summer salads Rock! Oh, and the dressing will keep at least a week in the fridge in an airtight container.

  2. This salad looks so super yummy~I am always afraid of salads with fruit, but I remember one you made with pears a long time ago, and it was amazing, so I am going to have to try this one too! I love poppyseed dressing!!

  3. Followed directions, and the dressing was a big disappointment … far too much poppy seed, and it tasted solely like diluted Miracle Whip.
