Baked Zucchini Fries

Can I get a get a hooray for Zucchini!! I know most people think it is kind of a boring green vegetable but I love it. It is so versatile. These fries will turn any Zucchini hater into a lover! They are rolled in Panko crumbs which make them super crispy.


Panko has changed my life; seriously I use it all the time. It makes things wonderfully crispy, Mmmmm!  I dipped mine in some of my homemade ranch dressing, delicious and guilt free!

What you need,


¼ cup flour (I used AP the original recipe called for whole wheat use what you have!)
2 eggs
2 tbsp water
1 cups of Panko breadcrumbs
Salt and Pepper to taste
½ tsp garlic powder
¼ tsp cayenne pepper
1 lb zucchini cut into 5 to 5 inch sticks (I used 1 medium sized zucchini, it was perfect)

Preheat your oven to 425 degrees. Line a baking sheet with parchment paper. The parchment really helped, the fries didn’t stick at all!
Put the flour in a large zip lock bag. Whisk the eggs with 2 tbsp of water and put in a shallow dish. Place the Panko, salt, pepper, garlic powder and cayenne pepper in another shallow dish and mix to combine.
Place the zucchini in the bag with the flour and shake until all the sticks are well coated. Dip each stick into the egg mixture then into the Panko crumbs and press to coat. Transfer the coated fries to the lined baking sheet. 


Bake for 18-20 minutes until golden brown and crisp. I rolled mine over at the halfway point.


I am a sucker for French fries, now I know that these aren’t the same but I loved this healthy version! If you have kids or a man that won’t eat veggies, this is the perfect way to get them to clean their plate.

  1. This looks really good! I never really liked breadcrumbs until I started using panko. No more of that slimy texture, just crispy goodness.

  2. I love this!! Zucchini recipes are always good because two little plants make many zucchini!! I love them many ways and this way looks so amazing! Must try this very soon!! Thanks for another great idea!
    PS Savanna wanted me to tell you that zucchini is not in fact a veggie, but it's a fruit. Apparently fruits develop from the ovaries of the plant and contain seeds! like who knew? Guess my 8 year old did! lol!!!
    At any rate, yay JennyB for another great recipe!!

  4. love zucchini fries!!! totally remind me of the zoo sticks at White Spot, but better cause they have panko and are baked :)
