Pink Grapefruit Muffins


I love grapefruit! They are so pretty, and they taste great, and they are in season!


I love having one in the morning for breakfast with a sprinkle of sugar!
I saw this recipe and knew I had to make it asap!


These muffins are soft and sweet with that perfect tang of the fresh grapefruit. They are soooo good!

What you need,

½ cup butter, at room temperature
½ cup granulated sugar
1 large egg
¼ cup milk, the recipe called for whole but all I had was 1% and it was fine
1 tsp. vanilla
1 cup all-purpose flour
1 ½ tsp. baking powder
½ tsp. salt, I didn’t use the salt because I used salted butter, but if you use unsalted butter go ahead and use the salt
1 heaping tbsp. grapefruit zest

For the glaze,
½ cup icing sugar
1 tbsp. grapefruit zest
2 tbsp. grapefruit juice

Preheat your oven to 350 degrees. Line a muffin tin with paper liners.
In the bowl of a stand mixer cream the butter and sugar together until pale and creamy. Add the egg and mix well. Add the milk and vanilla and mix to combine.
In another bowl, combine the flour, baking powder, salt (if using) and grapefruit zest. Add the dry ingredients to the wet and mix until just combined.
Spoon the batter into the prepared pan. I got 9 muffins. 

Bake for 14-16 minutes or until they are lightly browned and a toothpick comes out clean. Cool completely on a wire rack.

Once they are cooled you can put on the glaze.
Mix the icing sugar, grapefruit zest and juice until completely combined.
Pour over each muffin and let it set.


They taste so fresh and light. I just love them.

    P.S. - I think that one of your recipes will need to be my first attempt at using the new fabulous stove/oven!
