3-2-1 Cakes

Do you ever have one of those days, you know the ones, where you are sitting on the couch watching season 3 of Friday Night Lights for the 11th time, wishing Tim Riggins was your boyfriend.  The only thing that would make life better is if you had a piece of cake to stuff in your face.

I have those days sometimes. I found a way to have that piece of cake and it takes all of 1 minute!

I saw this 3-2-1 cake on Pinterest, aka my new obsession.

I have made a few Mug style cakes before but they are often a strange texture and they have a bunch of ingredients, they are kind of a pain.

Not this cake, it is super-fast it only has 3 ingredients and it takes 1 minute to cook.

What you need,

1 boxed Angel Food Cake mix
1 box of any flavor cake mix (I have used chocolate, and funfutti so far)
2 tbsp. water

Ok, here it goes. Dump both boxes of cake mix into a large zip lock bag. Seal it and shake it up until the 2 mixes are well combined.

Very lightly grease a coffee mug or small ramekin, put 3 tablespoons of the cake mix into the mug, and stir in 2 tablespoons of water, mix to combine.
Microwave the mixture on high for 1 minute.

That is it! Give it a sec to cool or you will burn your lips off. You can eat it right out of the mug, or carefully run a knife around the edge and tip it out onto a plate.

You can eat them plain but a few fresh berries and cream makes them look really cute.

Heaven help you if you have a container of left over chocolate buttercream frosting in your fridge.

These easy little cakes become a beautiful dessert worthy of any dinner party, no one will know they took 1 minute to make!

These mini cakes are so good. They have a light and fluffy texture, just like cake should.
Perfect for those times when you just need 1 piece of cake, ASAP!!

  1. This is a very, very bad thing to know about. I need to erase this recipe from my memory. Where are the Men In Black when you need them? Damn you, Jen!
