No Bake Cookies


I can’t believe that it is September, already! WOW, was this the fastest summer ever or what?
Since my niece starts back to school today I thought I would make an after school snack for her, even though she lives 2 provinces away!


My mom used to make these cookies for us sometimes. I loved them then, I love them now.
They are super easy and totally yummy!


What you need,

2 cups granulated sugar
½ cup butter
½ cup milk, I used 1% it is what I had
½ cup coco powder
1 tsp. vanilla extract
2 cups quick cook oats
1 cup flaked coconut

In a large pot over medium heat, combine the sugar, butter, milk and coco powder.  Stirring often bring to a simmer and cook for 5 minutes.
Remove from the heat and stir in the vanilla, oats and coconut.  Return the pot to the heat and continue to cook, stirring the whole time for another 2 minutes.

Drop the mixture by the tablespoonful onto a wax paper lined baking sheet. Let the cookies cool completely.

You can store the cookies in an airtight container for up to a week.


These cookies are so rich and chocolaty.

They are the perfect after school or after work snack!

  2. My mom used to make something like this, but threw away the recipe when we got older! So glad you have it! I may make a batch of these this weekend and eat all of them myself in one sitting!

  4. I am pretty sure we called them beaver lodges or as Ryan likes to call them S@#T stacks, why that I have no idea cause yummmmm they are so good!
