Sautéed Zucchini and Tomatoes


We are coming to the end of so many wonderfully fresh veggies. I decided to make a quick side dish with some farmer’s market zucchini, summer squash and tiny tomatoes.


It is simple and flavourful a perfect side dish!

What you need,

1 tbsp. olive oil
1 small zucchini, sliced
1 small summer squash, sliced
2 pints of mixed tiny tomatoes
3 cloves of garlic, minced
1 tsp. fresh thyme, chopped
2 tbsp. balsamic vinegar
Salt and Pepper

Heat the olive oil in a large sauté pan over medium high heat.  Toss in the garlic and cook for 1-2 minutes until just fragrant. Add in the zucchini, summer squash, tomatoes and balsamic vinegar. Sauté for 5-7 minutes until the zucchini is softened and the tomatoes are just starting to burst. Toss in the fresh thyme and cook 1 minute more, season with salt and pepper to taste.

Serve right away.


This sauté makes a great side dish for just about any meal.

  1. I love my zucchini this way but I've never put tomatoes with it! Gonna try it! Looks super yummy! And we love the new font Savanna says whoa that's pretty sexy auntie jenny! lol

  2. This looks really tasty, fresh, healthy, and even better, easy! Definitely going to try this one soon because I am bored of plain veggies as a side dish!
