Chicken Parmesan Burgers



I got this wonderful new cookbook the other day, Cooking Light’s "Crave".
I already have like 30 recipes flagged to make, I made these Patty Melts not long ago.



These Chicken Parmesan Burgers were a priority!
They are simple and quick, and taste amazing!



What you need,

2 Portuguese or Ciabatta rolls
½ pound ground chicken
1 clove garlic
1 tbsp. olive oil
¼ tsp. crushed red pepper
½ tsp. fresh rosemary, chopped
½ tsp. fresh thyme, chopped
½ cup marinara sauce + more for serving
Salt and Pepper to taste
4-6 slices mozzarella cheese
5-6 large basil leaves

In a bowl combine the chicken, red pepper, rosemary, thyme, ¼ cup of the marinara sauce and salt and pepper. Mixture will be quite moist.

Cover a plate with wax paper. Divide the mixture in half and form 2 patties on the wax paper. Cover with a second piece of wax paper and put in the freezer for about 20 minutes. I found this really helped the patties stay together.

Heat the oven to 375 degrees.

Heat the oil in an oven safe skillet over medium high heat. Carefully place the patties in the pan. I found that flipping them into the pan then pulling off the wax paper really helped them stay together.

Cook for 3-4 minutes until golden brown. Flip the patty over and place in the oven to finish cooking for 7-10 minutes until cooked through.
Remove the pan from the oven, remember to use oven mitts the handle of the pan will be HOT!

Turn the oven to broiler.

Spoon a tablespoon or 2 of the remaining ¼ cup of marinara sauce onto each patty. Top each with a few slices of mozzarella cheese.
Place the pan back in the oven under the broiler for a couple of minutes until the cheese is melted and bubbly.

Meanwhile toast the buns in a pan until light brown and crisp, rub the toasted halves with the garlic.
Throw the garlic away.

Spread a little marinara sauce on each side of the toasted bun. Place a patty on each bun and top with the basil leaves.

Serve with some extra sauce if you like.



These burgers were soooooooo good!

I will be making them again soon! The fresh basil and the garlicky toasted buns, YUM!
