I
have been searching for the perfect Szechuan green bean recipe for a long time.
My
favorite Chinese restaurant, Golden Great Wall makes the ultimate green beans
and I have been trying to duplicate them for years.
This
recipe is great! It isn’t quite Golden Great Wall but worthy of a post.
What
you need,
1
lb. green beans, ends trimmed
5
tbsp. soy sauce
2
tbsp. sesame oil
1
tbsp. cider vinegar
2
tbsp. sugar
1
tbsp. olive oil
1
large shallot, minced
3
cloves garlic, minced
3
tsp. fresh ginger, grated
5
tbsp. green onion, chopped
1
tsp. red pepper flakes (more if you like the heat!)
Start
by steaming the green beans for 3-4 minutes. Immediately shock them in a bowl
of ice water.
Drain
and set aside.
Combine
the soy sauce, sesame oil, vinegar and sugar in a small bowl.
Heat
the oil in a large skillet over high heat. Stir fry the green beans for about a
minute remove from the pan and set aside.
Add
the shallot and garlic, ginger and red pepper flakes to the pan and cook for
1-2 minutes until fragrant. Add the beans back to the skillet and pour the
sauce over. Stir to coat well.
Serve
immediately.
I
still need to know what Golden Great Wall does to their beans, but in the meantime
these will do just fine!

Contrary to most western meals, where veggies are usually a companion to meat or fish, vegetables are regarded as meal in its own right in most cuisines. Happy eating!
