Strawberry Rhubarb Sangria



My BFF Brenda is coming into town for a visit tomorrow, all the way from London!!
I am SO excited! It feels like I haven’t seen her in ages.


I am sure we will be enjoying many summery cocktails while she is here and this Strawberry Rhubarb Sangria is at the top of the list.

It is perfection, light and fruity and it has bubbles! LOVE IT!



What you need,

¼ cup sugar
½ cup water
2 stalks rhubarb, cut into 1 inch pieces
½ cup fresh orange juice (from 2 oranges)
1 orange, halved and sliced thinly
1 pint strawberries, hulled and quartered
1 bottle (750ml) Prosecco, chilled
4 cups club soda, chilled
Ice

In a small saucepan over medium heat combine the water and sugar. Bring to a boil then toss in the chopped rhubarb. Remove from the heat and let the mixture come to room temperature.

In a large pitcher combine the cooled rhubarb mixture, the orange juice, sliced orange and strawberries.

When you are ready to serve, pour in the bottle of Prosecco and the club soda, stir to combine.

Serve in over ice.
