Quinoa and Winter Fruit Salad



I had some left over quinoa and spent some time searching for a good way to use it up. I saw a lot of recipes for quinoa and fruit salad. They all looked amazing but they all had summer fruits in them, strawberries, blueberries, mango etc.

Since it is the dead of winter and you can’t find any good berries I went with winter fruits, grapefruit, oranges, kiwi and apple.



It tasted amazing, so refreshing and healthy.

What you need,

2 cups cooked and cooled quinoa
1 pink grapefruit
1 orange
2 kiwis
1 apple
3 tbsp. toasted sliced almonds
¼ cup chopped fresh mint
1 lime juiced
3 tbsp. honey
¼ tsp. vanilla (optional)

In a large bowl stir together the quinoa, grapefruit segments, orange segments, chopped kiwi and chopped apple.
Toss in the toasted almonds and fresh mint.

Whisk together the lime juice, honey and vanilla.
Pour the dressing over the fruit and stir to coat.

Serve right away or store it in the refrigerator until you are ready to serve.


This makes a great breakfast or a snack, even dessert!
A perfect way to use up left over quinoa.
