Chocolate Peanut Butter Sandwich Cookies



Uhhhhh these cookies are CRAZY!
The cookie part is soft and chewy; the peanut butter filling is perfectly salty and sweet.

As an added bonus they are super easy to make.
I would highly recommend going directly to your kitchen and making a batch, you won’t regret it!



What you need,

For the cookies,

1 box Devil’s Food Cake Mix
2 large eggs
½ cup vegetable oil
¼ cup all-purpose flour

For the filling,

4 oz. cream cheese, softened
¾ cup smooth peanut butter
1 tsp. vanilla extract
2 ½ cups icing sugar
2-3 tbsp. milk

For the cookies:
Heat your oven to 350 degrees. Line a cookie sheet with a silpat mat and set aside.

In a large bowl whisk together the cake mix and the flour.
Blend in the eggs and oil until well incorporated.

Roll the dough into 1 inch balls and place on the prepared cookie sheet.
Bake for 8-10 minutes.

Cool cookies completely on a wire rack.

For the filling:
In a medium bowl cream together the cream cheese, peanut butter and vanilla until smooth.

Add in the icing sugar and mix until totally incorporated.
Add in the milk a little at a time until you get a thick yet spreadable consistency.

When the cookies are totally cooled, spread a heaping tablespoon of the icing on the flat side of one cookie, then sandwich another cookie on top.

Stuff that cookie into your face hole.
Repeat…


These cookies will keep in an airtight container for 3 days, or in the freezer for 2 months.


Seriously people if you have a chocolate peanut butter obsession like I do, these cookies are what your dreams are made of!
