Spicy Sausage Penne



I saw this recipe on Pinterest. It looked amazing! When I clicked on the link it took me to the amazing Kevin and Amanda’s site. They have so many good recipes; I am not surprised this is one of theirs.


It is spicy creamy noodle perfection!



What you need,

8 oz. penne pasta
1 tbsp. olive oil
1 lb. smoked sausage, sliced
1 cup onion, diced
2 cloves garlic, minced
2 cups chicken broth, low sodium
1 10oz. can Rotel (use a can of diced tomatoes and a small can of green chilies if you can’t find Rotel)
½ cup heavy cream
Salt and Pepper to taste
1/3 cup thinly sliced green onion
1 cup Monterey Jack cheese, shredded
¼ cup Parmesan cheese, grated

Heat the olive oil in an oven safe skillet over medium high heat. Cook the onion and sausage for 4-5 minutes until the onions are softened and the sausage is starting to brown.
Add the garlic and cook for another 30 seconds until fragrant.

Add the chicken broth, Rotel, cream and penee to the skillet.
Season with salt and pepper. Bring the mixture to a boil. Cover the skillet and reduce the heat to medium low. Simmer until pasta is el dente, about 15 minutes, stir occasionally.

Turn on the broiler in your oven.

Stir in ½ the Monterey Jack cheese and the Parmesan.
Sprinkle the green onion and the remaining cheese on top.

Place the skillet in the oven and broil until the cheese is melted, bubbly and browned.



This dish was delicious! I think you could sub chicken for the sausage and it would be just as good. Also you could do a veggie version with portobello mushrooms or something! YUM‼

A simple quick and tasty dinner!
