Nutella Banana Swirl Muffins

If you need a Valentine’s Day treat for your sweetheart I suggest you make a batch of these amazing Nutella Banana Swirl Muffins.

They would be perfect to serve as breakfast in bed, or to sneak into a lunch for that special someone.

Nothing says "I love you" like Nutella‼

What you need,

2 cups all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
½ tsp. salt
1 cup mashed banana (approx. 3 medium sized ones)
½ cup granulated sugar
½ cup brown sugar, packed
1 large egg
¼ cup vegetable oil
2 tsp. vanilla extract
½ cup Nutella (this will be enough for the muffins plus some to eat off a spoon because you are totally gonna do that!)

Heat the oven to 375 degrees. Line a muffin tin with paper liners and set aside.

In a bowl, whisk together the flour, baking soda, baking powder and salt until combined.

In a separate bowl, whisk the banana and both sugars until combined. Add the egg, oil and vanilla, stir to fully combine.

Add the flour mixture to the banana mixture and fold just to combine. Do not over mix!

Using a large ice cream scoop, fill the muffin tins ¾ full. Top each muffin with about 1 teaspoon of Nutella. Use a toothpick to swirl the Nutella into the muffin, I found using 2 toothpicks at the same time and pulling outwards really worked well.

Bake the muffins for 15-17 minutes, or until a toothpick comes out clean.
Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Store in an airtight container for 2 days or you can freeze the muffins for up to 1 month.

These muffins are tender and moist and the Nutella swirled on top is decedent and awesome!

Enjoy‼
