Sesame Chicken with Quinoa



Look out, I have another wonderfully simple chicken recipe coming at ya!



This is one of my favourite kinds of dinner. Crisp little pieces of chicken smothered in a flavourful sauce. I am a saucy kind of girl!
Toss it on some quinoa and you have yourself a healthy quick weeknight meal!

 
What you need,

2 boneless skinless chicken breasts, cut into bite sized pieces
Salt and Pepper
1 tbsp. olive oil
3 tbsp. soy sauce
2 tbsp. rice wine vinegar
2 tbsp. honey
1 clove garlic, minced
½ tsp. freshly grated ginger
1 tsp. cornstarch
¼ cup thinly sliced green onion
2 tsp. toasted sesame seeds

1 cup dry quinoa
1¾ cup low sodium chicken broth

Start by cooking the quinoa. Rinse the dry quinoa in a fine mesh sieve under cold water. Put the quinoa into a pot with the chicken stock and about ½ teaspoon of salt. Bring the quinoa to a boil then reduce the heat to low and cover. Cook for 15-18 minutes until all the liquid is absorbed. Fluff with a fork.

In a large skillet heat the oil over medium high heat. Season the chicken with salt and pepper. Cook the chicken for 8-9 minutes until golden and cooked through.

Meanwhile in a bowl stir together the soy sauce, rice wine vinegar, honey, garlic, ginger and cornstarch.

Once the chicken is cooked stir in the green onions and cook for 1 minute. Pour in the sauce and stir until the sauce thickens.
Toss in the toasted sesame seeds right before serving.

Serve the chicken over the quinoa.



Fry up a couple of pot stickers to serve on the side. Totally fabulous dinner!
