Peanut Butter Banana Cookies

Finally it is Saturday! Thank goodness! I decided to make cookies to celebrate.
Yummy peanut butter banana cookies with chocolate frosting. These cookies are great on their own but the frosting just makes them decadent! I ran out of the frosting before I even got all the cookies done because I kept eating it with a spoon. YUM!
For the cookies:
¾ cup packed brown sugar
½ cup butter, softened
¼ cup peanut butter
1 egg
½ tsp vanilla
¾ cup mashed bananas (2 small)
3 cups all purpose flour
1 tsp baking soda
¼ tsp salt

For the frosting:
1 cup powdered sugar
¼ cup butter, softened
1 square unsweetened baking chocolate, melted and slightly cooled
1-2 tbsp milk

Heat oven 350 degrees.
In a large mixing bowl, combine brown sugar, butter, peanut butter, egg and vanilla. Beat at medium speed of an electric mixer until light and fluffy. Add in mashed bananas. Beat at low speed until combined. Add the flour, baking soda and salt. Beat at low speed until soft dough forms.
Drop dough by heaping teaspoon onto a silpat lined baking sheet. Press dough down slightly to flatten. Bake for 10-12 minutes until lightly browned. Cool completely.

In a small bowl combine all the frosting ingredients. Beat at low speed until smooth. Add enough milk to get a spreadable but thick consistency.
Spread frosting evenly on cookies. Let dry completely before storing in an airtight container.
