Buffalo Chicken Mac and Cheese


My in house taste tester loves buffalo hot wings. I love Mac and cheese. When I saw this recipe on How Sweet Eats I knew it going to be perfect for us.

 It has a creamy cheesy sauce spiked with buffalo wing sauce and little nuggets of chicken. It is a nice change from the usual Mac and cheese.

Here is what you need,
3 cups uncooked pasta, I used this funky Scooby Doo shaped pasta, I don’t know why it’s called that but I thought it was cool!
2 boneless skinless chicken breasts, cooked and cut into bite sized pieces.
1 tbsp butter
1 tbsp flour
1 ½ cups milk (I used whole milk)
4 oz. grated Monterey jack cheese, (I used jalapeno flavoured) – plus more for topping
1/3 cup grated cheddar cheese – plus more for topping
1/3 cup buffalo wing sauce
1/3 cup panko crumbs
Salt and pepper to taste

Preheat oven to 375 degrees.
Cook the pasta according to directions.
I cut up my chicken breasts into cubes sprinkled with salt and pepper and sautéed in 1 tsp. oil until nicely browned. Set aside.
In a saucepan over medium heat add the butter until melted and add flour, whisk together and cook for 1-2 minutes until it starts to turn golden brown. Add in the milk whisking until smooth. Keep stirring until mixture starts to thicken about 7-8 minutes. Add in the grated cheese and whisk until smooth. Stir in the buffalo wing sauce. Taste and season with salt and pepper to taste.
Spray a 9X13 baking dish with non stick spray. Pour sauce over pasta and add in chicken, stir to coat. Sprinkle the top with remaining cheese and panko crumbs. Bake for 25 minutes until bubbly and golden brown. 
I served mine with carrot and celery sticks and a little ranch dressing for dipping. Seemed like the perfect side!  A Caesar salad would be nice too.
