Hi ya, happy Victoria Day to all my Canadian friends. Sure is nice to have an extra day off. It is beautiful and sunny here today I hope it is where you are too.
If you are looking for something simple and quick to whip up
for dinner this week I have the perfect thing, soba noodles with chicken and
broccoli. Firstly it has noodles so that makes it a winner in my book. The
sauce is heavenly, toss in a little chicken for protein and some crunchy
broccoli for texture and you have a great dinner!
What you need,
2 boneless skinless chicken breasts cut into 1 inch pieces
Salt and Pepper
1 tsp. olive oil
1 - 8oz pkg. soba noodles
3 cups broccoli florets
2 tbsp. rice vinegar
1 tbsp. sesame oil
1 tbsp. olive oil
2 tbsp. soy sauce
1 tbsp. creamy peanut butter
1 tsp. brown sugar
¼ tsp. red pepper flakes
1 clove garlic, minced
3 green onions, chopped
2 tsp. toasted sesame seeds, divided
Bring a large pot of water to a boil, add the soba noodles
and cook for 3 minutes. Add the broccoli florets and cook for 3-4 additional
minutes until both the noodles and broccoli are tender, drain and set aside.
Meanwhile heat 1 teaspoon of olive oil in a frying pan over
medium high heat. Season the chicken well with salt and pepper. Cook the
chicken for 6-7 minutes until well browned and cooked through.
In a large bowl combine the vinegar, sesame oil, olive oil,
soy sauce, peanut butter, brown sugar, red pepper flakes, garlic, onion and 1
teaspoon of the sesame seeds. Whisk until well combined.
Add the drained noodles and broccoli and chicken to the bowl
with the sauce. Gently toss everything until the sauce coats all the noodles.
Sprinkle on the remaining 1 teaspoon of sesame seeds before
serving.
We loved this simple dish. It was so quick to put together yet
so full of flavor. I will be making this again for sure!
