I
can’t believe that it is September, already! WOW, was this the fastest summer
ever or what?
Since
my niece starts back to school today I thought I would make an after school
snack for her, even though she lives 2 provinces away!
My
mom used to make these cookies for us sometimes. I loved them then, I love them
now.
They
are super easy and totally yummy!
What
you need,
2
cups granulated sugar
½ cup
butter
½ cup
milk, I used 1% it is what I had
½ cup
coco powder
1
tsp. vanilla extract
2
cups quick cook oats
1
cup flaked coconut
In
a large pot over medium heat, combine the sugar, butter, milk and coco powder. Stirring often bring to a simmer and cook for
5 minutes.
Remove
from the heat and stir in the vanilla, oats and coconut. Return the pot to the heat and continue to
cook, stirring the whole time for another 2 minutes.
Drop
the mixture by the tablespoonful onto a wax paper lined baking sheet. Let the
cookies cool completely.
You
can store the cookies in an airtight container for up to a week.
These
cookies are so rich and chocolaty.
They
are the perfect after school or after work snack!
