These
are kind of like a kicked up Rice Krispies square, except with corn flakes,
peanut butter and chocolate. So not really like Rice Krispies squares at all…but
tasty all the same!
What
you need,
1
cup packed brown sugar
1
cup light corn syrup
1
cup peanut butter
1
cup salted, dry-roasted peanuts, chopped
6
cups cornflakes
2
cups semisweet chocolate chips
Start
by lining a 9x13 inch baking dish with tinfoil. Spray the foil well with
non-stick cooking spray.
In
a large saucepan combine the brown sugar and corn syrup. Heat over medium low
heat until the sugar dissolves and the mixture starts to boil, stirring
constantly.
Remove
from the heat and stir in the peanut butter and chopped peanuts until the
mixture is smooth. Stir in the corn flakes.
Working
quickly, press the mixture into the prepared pan in an even layer.
Let
the mixture cool completely then top with the chocolate.
To
melt the chocolate chips, put them in a large microwave safe bowl. Heat them at
medium power in 30 second intervals, stirring at each stop until melted and
smooth.
Pour
over the bars and spread in an even layer.
Let
the chocolate cool completely then you can use the tinfoil sling to remove the
bars from the pan and cut into small squares.
Store
bars in an airtight container for up to a week.
These
bars are addictive, I warn you!
They
would make a great addition to your holiday cookie swap! You just can’t go
wrong with peanut butter and chocolate!
