Chicken Satay with Peanut Sauce


I am always looking for new and exciting ways to cook chicken. When I saw this recipe I knew it would be a hit. It was so flavourful! 



What you need,

For the Satay,
2 boneless skinless chicken breasts cut into strips
1 tbsp. toasted sesame oil
1 tbsp. rice wine vinegar
1 tbsp. soy sauce
1 clove garlic, minced
1 green onion, chopped (just the white parts)
½ tsp. red-pepper flakes
Salt and Pepper to taste


For the Peanut Sauce,
¼ cup creamy peanut butter
3 tbsp. rice wine vinegar
3-4 tbsp. water
½ tsp. red-pepper flakes
1 green onion, chopped (just the green parts)

In a medium bowl whisk together the sesame oil, rice wine vinegar, soy sauce, garlic, green onion and red pepper flakes. Season with salt and pepper.
Toss the chicken pieces in the marinade until well coated.
Refrigerate for at least 4 hours. You could even do overnight.

For the sauce stir together the peanut butter, rice wine vinegar, water and red pepper flakes until smooth. Thin with water more water if needed. Stir in the green onion.
Set aside until time to serve.

Soak some wooden skewers in water for 20 minutes.  Then thread each piece of chicken on skewer. Cook over medium heat on the BBQ for 3-4 minutes per side until the chicken is cooked through.

Serve with the peanut sauce.
I also served mine with jasmine rice and spicy roasted broccoli.


This Satay was simply delicious. It was easy and fast. It was such a nice change from the usual chicken dinners.
I will be making it again for sure!
