Which
means it is time to get out the slow cooker!
I
love the ease of making dinner in the slow cooker. Plus most of what you make in
it is hearty warm comfort food.
This
ravioli was easy and it tasted awesome!
What
you need,
1
tbsp. olive oil
1
medium onion, diced finely
3
cloves of garlic, minced
1
jar of four cheese flavored tomato sauce (I used Classico but any brand you
like will do)
1
can of tomato sauce (I used Hunt’s tomato with herbs and spices)
1
tsp. Italian seasoning
2
packages (25oz) frozen beef filled ravioli (I couldn’t find frozen ravioli so I
just bought the Olivieri brand fresh pasta and froze it the day before.)
2
cups Mozzarella cheese, shredded
1/4
cup chopped fresh basil
Fresh
ground black pepper
Parmesan
cheese for serving
In
a large pot heat the olive oil over medium high heat.
Add
in the onion and garlic and sauté until softened, about 5 minutes.
Add
in the pasta sauce and the tomato sauce, season with pepper and the Italian
seasoning.
Let
it simmer for about 5 minutes. Stir in ½ the fresh basil.
Spray
the liner of your slow cooker with non-stick cooking spray.
Place
about a cup of the sauce on the bottom of the dish and layer on about half the
frozen ravioli.
Layer
on half of the sauce, sprinkle with half the grated cheese. Top that layer with
the rest of the frozen ravioli. Then add the rest of the sauce and top with the
remaining cheese.
Bake
on low for 5-6 hours. I did mine for close to 6 and it was very well done, 5
hours would probably be plenty.
Serve
with some freshly grated Parmesan cheese and the rest of the fresh basil.
I
made some Herb Toast and a nice Spinach salad to go with it.
It
was a perfect meal!

Thank you so much for making this meal for me when I was back home! It was awesome, so I can vouch for what a good recipe it is! Now I will have to try making it myself. But it won't be as good as if you were here eating it with me...!
