I have been kind of obsessed with tacos lately. They are such a a great summer food. I just love how quick they are to make and you can put just about anything on a tortilla and you have yourself a taco.
These crispy shrimp tacos are to die for. I was too lazy to
bread and fry my own shrimp so I just bought some frozen pre-breaded ones,
these ones to be exact. They worked perfectly and tasted delicious. If you are
feeling really ambitious you can go ahead and prepare fresh shrimp, I am sure
that would be even better!
The sauce is sweet and spicy; it really goes great with the
shrimp‼ Really it would be great with any fish.
What you need,
6-8 small flour tortillas
1 lb. small shrimp, breaded and fried
2 cups shredded lettuce
1 large tomato, diced
1 cup shredded cheddar cheese
1 cup crunchy tortilla strips (I used the ones you can put
on a salad they worked perfectly)
1 lime, cut into wedges
For the sauce,
¼ cup mayo
¼ cup sour cream
¼ cup sweet Thai chili sauce
2 tsp. sriracha sauce
½ lime, juiced
To make the sauce, combine all the ingredients into a small
bowl and stir to combine. Adjust the hot sauce to your liking.
Store the sauce in the fridge until you are ready to use.
Prepare the shrimp according to package directions.
Warm the flour tortillas in a dry pan over medium heat until
they start to puff up a bit and are heated through. Keep them warm on a plate
under some foil.
To assemble a taco layer on some lettuce, tomato, cheese,
tortilla strips and cooked shrimp. Drizzle on some sauce and a squeeze of lime.
These tacos are sooooo good. They are easy and quick and absolutely
perfect.
