These little babies are awesome. Moist and chocolatey and sorta healthy, zucchini and all! They would be perfect to make for your Sweet on Valentines Day!
Or just make them for yourself and eat them all! Dont feel guilty! You deserve it!
The zucchini makes these little bites very moist. They are kind of a fudgy brownie texture. Use high quality cocoa powder it will give you a nicer chocolate flavor.
Stuff you need:
½ cup of butter, melted and cooled
1 cup sugar
1 large egg
1 cup flour
1 cup finely grated zucchini, from 1 medium zucchini
*Just a side note I used a very full packed cup of zucchini, if you wanted them a little less zucchini-y just use a loosly packed cup.*
¼ cup cocoa powder
½ cup semi sweet chocolate chips
3 tbsp sour cream
½ tsp salt
½ tsp vanilla
24 whole walnut or pecan halves (optional)
How to:
Preheat oven to 350 degrees. Spray a mini muffin tin with cooking spray. (I find the pam for baking with the flour in it works super well!)
In a large bowl, stir together butter, sugar, salt and egg until combined. Add vanilla, zucchini and sour cream and stir until incorporated. Sift in flour and cocoa powder into a bowl and stir until just combined. Stir in chocolate chips.
Fill each cup with 2 tbsp batter at this point you can top with a nut half if you want to. I have a little issue with walnuts, they make my mouth itchy! I didn’t put any nuts on but you do whatever floats your boat!
Bake until a toothpick comes out clean. 15-17 minutes. Let muffins cool in pan for 5 minutes or so then remove to a cooling rack.
If you wanted to be fancy you could make a little white or pink icing and sprinkle on some little heart candies!
People will love you forever if you make them a batch of these!
