Trail Mix - The Perfect Road Trip Snack

We are going on a road trip… I don’t love being in the car for long periods of time but having good snacks helps a lot!

I decided to whip up an epic batch of Trail Mix, this not only combats hunger but it is tasty and fun!


I put peanuts, almonds, sunflower seeds, mini m&m’s, mini Reece's Pieces, raisins, dried cranberries, and a mixture of other dried fruits!
It is delish!

When I took a look at the other snacks I picked up I noticed that it looks like I might be travelling with a toddler…
Goldfish Crackers, Sour Dinos, Menthos and classic Cheese and Crackers. Oh well, after I have been in the car for over 4 hours I pretty much turn into a toddler.


I am taking a few sort of healthy things, like apples, plums, yogurt, cheese and homemade breakfast bars.

I don’t think we are gonna starve!

Meatball Bubble-Up Bake



This is one of the easiest, tastiest dishes I have made in a long time! 5 ingredients, 1 dish and less than an hour in the oven, how do you go wrong??


It took all of 5 minutes to put together and 45 minutes in the oven and I had a wonderful dinner. Mix up a quick green salad to go with and you are gonna be a hero! Look at all that melty cheese, come on...


What you need,

1 can of Pillsbury Biscuits
1 jar Original Prego Sauce (you could use whatever sauce you like!)
12 -15 frozen meatballs
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
 
OK are you ready… this is so easy it is almost embarrassing.
Heat the oven to 350 degrees.

Cut each biscuit into 4 pieces and place them in a single layer the bottom of a lightly greased 9x13 inch pan.

Scatter the meatballs on top of the biscuits. Pour on the Prego sauce then top with both cheeses.

Bake the casserole for 35-45 minutes or until the biscuits are bubbled up and the cheese is melty and delicious.


That is it folks! Easy peasey, and totally awesome!

I will be making this again for sure! It would be great with cooked shredded chicken too, almost like a chicken Parmesan situation, which I love.


Hope you like it as much as I did! Oh and a quick tip, put some tinfoil down on to the oven rack before putting the baking dish in, this will save you a lot of scraping the bottom of the oven later, it really does get bubbly!
