Sugared Cranberry and Brie Bites


Tis’ the season for holiday parties!  If you are looking for a simple and super cute appetizer idea, make these cranberry brie bites.

 
They are really tasty and they look so fancy.


What you need,

½ cups fresh cranberries, picked through, soft ones removed
1½ cups granulated sugar, divided
1 cup water
1 block of brie cheese
Cranberry sauce, or chutney or even pepper jelly would be good
Crackers

In a large sauce pan combine 1 cup of the sugar and the water.

Over medium heat cook until the sugar dissolves about 5-10 minutes.

Remove from the heat and let the mixture cool for about 10 minutes.

Place your cranberries in a glass bowl, pour the sugar mixture over them, and stir to coat.

Cover the bowl with plastic wrap and refrigerate for 4 hours.

Once the berries are chilled pour them into a colander and let them drain for 10 minutes.

Pour the ½ cup sugar onto a shallow baking pan. Pour the sticky cranberries onto the sugar and slide the baking sheet back and forth to coat the berries.

Let the coated berries sit at room temperature for an hour or so until the sugar hardens.

To assemble, place a slice of brie on each cracker, spoon a little jelly on each and top with 2 or 3 of the sparkling cranberries.  


Aren’t they pretty!

You can also use the berries to garnish Festive Christmas drinks!
The combination of tart and sweet is perfect; I ate a bunch just out of the bowl!
