I
really wanted to bake something today, but after all the Christmas treats I
didn’t want to make any more cookies!
I
decided a nice quick bread we could have for breakfast would be perfect.
I
have been making this loaf for a long time; it is one of my favourites.
It is so simple
to throw together and it has so much flavour!
What
you need,
½
cup butter, softened
1
cup granulated sugar
2
eggs
1
tsp. vanilla
1/3
cup milk (I used 1%)
1
cup grated tart apple, grated (granny smith work great)
2
cups all-purpose flour
1
tsp. baking powder
½
tsp. baking soda
¾
tsp. cinnamon
½
tsp. salt (I didn’t use the salt cause I used salted butter, as usual!)
Topping:
¼
cup brown sugar
1
tbsp. all-purpose flour
1
tsp. butter
½
tsp. cinnamon
In
a small bowl mix the topping by crumbling the sugar, flour and cinnamon into
the butter until it looks like small crumbs. Set aside.
In
a large bowl mix the butter and sugar until light and fluffy. Add in the eggs 1
at a time until pale and fluffy. Stir in the vanilla and milk until combined. Fold
in the grated apple.
In
a separate bowl whisk together the flour, baking powder, baking soda and
cinnamon. (Also the salt if you are using it)
Combine
the dry ingredients into the wet and mix until just combined, don’t over mix.
Scrape
the batter into a loaf pan that has been sprayed with non-stick cooking spray.
Using
a spatula even off the top and sprinkle the topping in an even layer all over
it.
Bake
in at 350 oven for about 60 minutes, or until a toothpick comes out clean.
Let
it cool in the pan for 30 minutes then turn out onto a rack to cool completely.
This
bread is so moist and tender. It is almost more like cake than a quick bread.
It
made a perfect Sunday breakfast.
