Chocolate Chip Cookie Dough Ice Cream



I know this is a weird time of year to be posting an ice cream recipe, but its cookie dough ice cream.  I don’t think there is ever a wrong time for cookie dough anything!!


This ice cream is so flavorful and so creamy.
I loved it! Mmmm cookie dough!

What you need,

For the cookie dough,
5 tbsp. butter, melted
1/3 cup packed brown sugar
½ cup flour
½ tsp. vanilla
¾ cup chocolate chips, I used mini chips

For the ice cream,
3 tbsp. butter
2 cups heavy cream
2/3 cup brown sugar
4 large egg yolks
2 tsp. vanilla extract
1 ½ cups whole milk
1 cup chocolate chips, optional

To make the cookie dough, stir together the butter and sugar until smooth. Add in the vanilla. Stir in the flour until well combined. Stir in the chocolate chips.

Form dough into a disc or log and wrap in saran wrap. Put the dough in the fridge while you make the ice cream.

To make the ice cream,
Melt the butter in a medium saucepan over medium high heat. Heat the butter, stirring often until it is a deep golden brown; watch it closely so it doesn’t burn.

Whisk in the heavy cream and heat until simmering.
In a separate bowl whisk together the brown sugar and the egg yolks until light and fluffy.

Once the cream mixture is hot, temper the egg mixture. Do this by adding about ½ cup of the hot milk into the egg mixture, whisking constantly. Slowly whisk the rest of the hot cream into the egg mixture.

Return the milk/egg mixture back into the pot and heat until slightly thickened and a thermometer reads 170-175 degrees.

Immediately remove the mixture from the heat and pour through a fine mesh strainer into a large chilled glass bowl. Stir in the vanilla and whole milk.

Cover the mixture with plastic wrap and chill for 8-24 hours.

When you are ready pour the ice cream mixture into your ice cream maker and process according to manufacturer’s instructions.

Once it has finished processing, cut up the prepared cookie dough into small chunks and stir into the ice cream. You can also add the chocolate chips at this point. I did but I wouldn’t next time, there is lots of cookie dough and I just found it to me a little too much with the extra chips.

Put into a freezer safe air tight container and freeze until hard.


Perfect chocolate chip cookie dough ice cream, it totally tastes like Ben and Jerry’s!
