Tater Tot Casserole

It has been cool and rainy here the last few days. This new fall weather really increases my need for comfort food.

This Tater Tot Casserole is total comfort food‼

Really, you can stick a crispy tot on just about anything and it would be comfort food.

What you need,

1 lb. ground beef
1 small onion, diced
2 cloves garlic, minced
1 tbsp. ketchup
1 tbsp. Worcestershire sauce
Salt and Pepper
1 tsp. dried basil
1 can cream of mushroom soup
¼ cup milk
1 cup frozen mixed veggies
1 cup shredded cheddar cheese
½ bag frozen tater tots

Heat your oven to 375 degrees.

In a large sauté pan cook the beef over medium high heat until cooked through and starting to brown. Drain off any excess fat.

Add the onions and garlic and cook for 3-4 minutes until the onions begin to soften and the garlic is fragrant.
Stir in the ketchup, Worcestershire and basil, season with salt and pepper.
Add in the mushroom soup and milk and stir to combine.
Turn off the heat and stir in the frozen veggies.

Pour the beef mixture into a casserole dish, layer on the cheese and top with the tater tots.

Bake for 45 minutes until it is hot and bubbly and the tots are brown and crisp.

Serve with a nice green salad and you have a perfect comforting dinner.

This casserole is delicious! I mean look at it, awesome.

As a side note, I totally forgot the put the cheese in, I was so intent on lining up the tots perfectly the cheese just slipped my mind.
It still tasted amazing but don’t be like me, add the cheese, everything is better with cheese!

Enjoy!

Jen
