Chicken Orzo Skillet



It is Monday and I know you all want a super quick weeknight dinner idea. Get ready cause I have a great one for you.



This skillet dinner has it all, chicken, pasta, spinach and the best part, FETA CHEESE‼ I love feta cheese!

What you need,

1 lb. boneless skinless chicken breasts cut into 1 inch pieces
1 cup uncooked Orzo
8 cups water
1 16oz. can chopped tomatoes, drained
2 tsp. tomato paste
½ tsp crushed red pepper
Salt and Pepper
3 cups baby spinach leaves
3 oz. feta cheese crumbled

In a large non-stick skillet over medium high heat, cook the chicken for 5-6 minutes until it is well browned. Remove the chicken from the pan and set aside.

Bring 8 cups of water to a boil in a large pot. Add the orzo and cook for about 8 minutes until el dente. Drain the pasta in a colander, reserving ¼ cup of the cooking liquid.

To the skillet add the tomato paste, chopped tomato, reserved cooking liquid, red pepper flakes. Cook over medium high heat for about 3 minutes. Add the chicken and the pasta to the pan and stir to combine. Season the mixture with salt and pepper to taste.
Add in the spinach leaves and stir until just wilted 1-2 minutes.

Remove the skillet from the heat and sprinkle on the crumbled feta cheese.



That is it, super easy! This is a fantastic weeknight meal, it took no time at all and it tastes amazing!
