Layered Taco Pie


I will admit that I have, in the past, eaten those Old El Paso Taco Pie Kits. They are tasty, but man, they are so full of sodium and preservatives. I was craving one so I decided to make mine at home and steer clear of the box mix.


It was really easy and very very tasty!


What you need,

1 lb. ground beef
1 can black beans, rinsed and drained
2 heaping tbsp. homemade taco seasoning
1 cup water
1 ½ cups grated cheddar cheese
1 ½ cups grated Monterey jack cheese
2 green onions chopped
4 large flour tortillas
Sour cream and Salsa for serving

Preheat your oven to 350 degrees. Very lightly grease a deep pie plate.

In a large skillet over medium high heat, cook the ground beef until cooked through. Drain off any excess fat. Stir in the black beans. Add the taco seasoning and water and let it simmer on medium low heat for 15 minutes or so until most of the liquid is gone.

To assemble the pie, lay a tortilla on the bottom of the pie plate. Scoop 1/3 of the beef mixture onto the top and spread it out in an even layer, sprinkle lightly with the green onion and ¼ of the grated cheeses. Layer on another tortilla and continue the same way 2 more times ending with a tortilla. Top that final tortilla with the last of the cheese.

Pop it into the oven for 20 minutes until lightly browned and the cheese on top is melted.

Serve with a dollop of sour cream and some salsa.


While we were eating this delicious pie I thought that some frozen corn kernels added to the beef mixture in the last 2 minutes of cooking would be a nice addition.

Also if you wanted to get fancy you could add a layer of refried beans in there too.

My in house taste tester said “it is way better than those boxed ones!”
So give it a whirl.

  2. I've never tried (or even seen) the boxed ones, but this looks super yummy! Going' on my list! Love Mexican, and black beams are so good for you!
