Tomorrow
is Valentine’s Day. We don’t usually do much around here to celebrate but I
decided that since my in house taste tester recently built me a light box he deserved
some cookies! Thanks Babe, you are the best, Love you!
These
are the perfect cookie to make for your sweetheart!
They
are oh, so good. Nice and chewy, not to sweet and full of chocolate flavor!
What
you need,
½
cup granulated sugar
½
cup packed brown sugar
½
cup butter, softened (I used salted butter, so I didn’t add additional salt)
2
eggs
1
tsp. vanilla
1¾
cup all-purpose flour
¼
cup unsweetened cocoa powder
1
tsp. baking soda
¼
tsp. salt
1½
cups semi-sweet chocolate chunks
Heat
your oven to 350 degrees. Line 2 baking
sheets with parchment paper or silpat mats.
In
a bowl sift together the flour, cocoa powder, baking soda and salt if you are
using it.
In
the bowl of a stand mixer fitted with the paddle attachment combine the sugars
and butter. Blend until light and fluffy.
Add
in the eggs, one at a time until well incorporated.
Add
the vanilla.
On
low speed add in the flour mixture until just combined.
Stir
in the chocolate chunks.
Spoon
the dough by the tablespoonful onto the prepared baking sheets.
Bake
for 8-10 minutes until golden around the edges.
Let
them cool completely on a wire rack and store for up to a week in an air tight
container.
For
me these cookies are best just out of the oven, they are all warm and melty… to
die for‼
Happy
Valentine’s Day everyone!

Too bad my husband doesn't like chocolate, guess I'll just have to make them for myself! :)

ReplyDeleteThank you for your lovely blog - it's wonderful! I made your Slow Cooker Butter Chicken the other night and these cookies tonight (FYI: mine took longer than 10 mins to cook through. I guess your oven's hotter than mine), and both were huge hits. Will be coming to you for supper ideas regularly!
