Today
I am going retro; I made the classic spinach dip appetizer!
It
is so super easy and it tastes amazing. I think every single baby shower,
wedding shower or Christmas party I went to from 1982 to 1996 had one!
What
you need,
2
cups sour cream
1
cup mayo
1
pkg. Knorr Vegetable Soup Mix (dry)
1
pkg. (300grams) chopped frozen spinach, thawed and as much water squeezed out
as you can
1
can water chestnuts, drained and chopped
3
green onions, finely chopped
¼
tsp. fresh ground black pepper
1
large round loaf of pumpernickel bread
In
a large bowl stir together the sour cream and mayo until smooth.
Fold
in the soup mix, spinach, water chestnuts, green onion and pepper, combine
well.
You
can make this the day ahead and store in an airtight container in the fridge.
About
1 hour before serving, carefully cut out the center of the pumpernickel bread.
Carefully
remove as much of the middle of the bread as you can with a knife or your
fingers, creating a bowl.
Scoop
the prepared dip into the bread bowl and stash it back into the fridge.
Cut
the bread you pulled out of the loaf into bite sized pieces and use those for
dipping.
I
often have to buy a second loaf of bread to cut up for dippers; it just depends
on how big your original loaf is.
There
you have it, a classic appetizer that has never lost its appeal!
