Baked Eggs with Spinach, Tomatoes and Feta

If you haven’t baked eggs yet do it now. They are super easy and they taste GREAT!

This Greek inspired version is fantastic. The melty feta cheese just makes my heart joyful!

What you need,

2 eggs
6-8 cherry tomatoes, halved
1 cup baby spinach leaves
2 tbsp. crumbled feta cheese
Salt and Pepper
1 tsp olive oil
1 tsp. butter
Toast for serving

In a small skillet heat the butter and olive oil over medium heat. Toss in the tomatoes and cook for 1-2 minutes, or until they start to soften. Add the spinach and cook just until it starts to wilt, 1-2 minutes. Season the veggies with salt and pepper.

Remove from the heat, crack the eggs on top and sprinkle the feta over the top.
Bake in a 375 degree oven for 8-12 minutes until the eggs are cooked to your liking.

Serve with warm buttered toast.

This breakfast will fill you up and make you happy!

If you want you can use a bigger pan and more eggs and cook for a crowd. It is super easy.
