Creamy Pesto Chicken

Are you looking for a super quick weeknight meal that will make your taste buds very happy? This is the recipe for you! It is super fast, it only has 5 ingredients and it is really really tasty. Oh man is it tasty!

Here is what you need,
1 tsp olive oil
4 boneless skinless chicken breasts
2/3 cup chicken broth, low sodium
1/2 cup Philadelphia cream cheese spread
4 tbsp basil pesto, you could make your own pest if you were feeling ambitious. I was lazy and used some store bought stuff, it tasted great.

Heat oil in a large non stick skillet on medium heat add the chicken and cook 6-8 minutes on each side until chicken is cooked through. Remove to a plate and keep warm.
Add the broth to the skillet and cook until warmed, 3-5 minutes. Add the cream cheese spread and the pesto. Cook and stir until cheese is melted and sauce is smooth. It will thicken a bit.
Add the chicken back to the pan to coat.
Yep that's it, just that easy!

I served mine with roasted potatoes. Which tasted great dipped in the sauce by the way!!

As I was eating this dinner I couldn't stop thinking about how good this sauce would be on gnocchi.  I can't wait to try it.

  4. I just finished making this sauce and putting it on gnocchi, and It was AMAZING! Sooo easy, too. I figured I would have sauce leftover because it seemed like alot, but nope, it was too good! Might try grilling some chicken, cutting it up and adding it at the end next time.
