Rhubarb Dump Cake


Happy Mother’s Day! 

I can’t be with my Mom today so I made this lovely cake in honour of her. Thanks for everything you do Mom; I don’t know what I would do without you! 



What you need,

4 cups fresh rhubarb, chopped
½ cup granulated sugar
1 pkg. Strawberry Jell-O-O powder (85g)
1 pkg. white or vanilla cake mix (2 layer size)
1 cup water
1/3 cup butter, melted
Vanilla ice cream or sweetened whipped cream for serving

Preheat your oven to 350 degrees.

Spray a 9x13 inch baking dish with non-stick cooking spray. Spread the rhubarb out over the bottom of the dish. Sprinkle the sugar and Jell-O powder over the top.
In a separate bowl mix the cake mix with the water and butter. Stir until just combined, do not over mix.
Spread the batter over the rhubarb in an even layer.

Bake for 45 minutes or until golden brown.

Serve warm or cold with ice cream or whipped cream.


I loved this cake! It was tart with just the right amount of sweetness and the soft cake on top was great!


I wish my Mom was here to have a slice.
