Pumpkin French Toast for 1



My in house taste tester works 2 nights a week. This means I am on my own for dinner. Sometimes, when it is just me it is hard to get motivated to make anything other than Popcorn for dinner.


So I am always looking for fast easy recipes that just make 1 or 2 servings.
I had a little left over pumpkin from when I make these crazy good Pumpkin Cream Cheese Muffins.

Just enough to make French toast!


I love French toast! This version is so awesome! So much flavor, and easy!

What you need,

2 eggs, beaten
2 tbsp. milk, I used 1%
½ tsp. vanilla extract
2 tbsp. Pumpkin puree
1 tsp. granulated sugar
½ tsp. pumpkin pie spice
2 thick slices of brioche bread

Whisk together all the ingredients in a large shallow dish, like a pie plate.

Carefully lay the bread slices in the mixture allowing it to soak up all the liquid.

Flip over the bread to make sure it is good and soaked.
Heat a large non-stick skillet over medium high heat.

Place the soaked bread in the hot pan and cook until well browned on the first side, 3-4 minutes. The flip it and cook for another 3-4 minutes on the second side until browned and the custard is set.

Serve with a little butter and your favorite syrup.


Delish! A perfect easy and tasty dinner for 1!!

If you had some nice crisp bacon to go along side it would be even better, I didn’t, so sad.
Oh well, I survived.
