Sweet and Sour Meatballs

Awhile back I made these Meatballs. They were so awesome. I made subs with them that day, but tonight I took a bag out of the freezer and whipped up a batch of Sweet and Sour style on a bed of rice.
Here is what you need,
1 lb of meatballs
1 cup brown sugar
1/2 cup white vinegar
1/2 cup water
1 can chunk pineapple, drained
1 red pepper, chopped
1 onion, chopped
2 carrots, chopped
2 stalks of celery, chopped
1 cup mushrooms, sliced
2 cloves garlic, minced
2 tbsp cold water
1 tbsp corn starch
1 tbsp soy sauce

In a large saute pan over medium heat saute onions, pepper, carrots, celery and mushrooms until just starting to soften. Add garlic and pineapple. Mix the brown sugar, vinegar and water together. Pour over veggies and bring to a boil. Add in the meatballs, simmer until meatballs are warmed through, 5 minutes or so. Stir together cold water, cornstarch and soy sauce, add to pan and simmer 10 minutes or so. The sauce will thicken up.
Serve over rice.
Quick and easy and yummy! My favorite kind of supper.

 I love when the hard part of the meal is already done, pre-made meatballs rock!
