Penne with Chicken Sausage, Kale and White Beans for One



My in house taste tester works 2 evenings a week so I am on my own for dinner.
I usually try to make something I know he wouldn’t really like. He is a good eater, not picky, but some things I know he wouldn’t eat if he didn’t have to, things like kale and white beans‼


This simple pasta can be whipped up in 15 minutes; it is so full of flavour.  I loved it!



What you need,

1 chicken sausage (I really like the ones from Urban Fare, chicken apple! YUM!)
1 bunch of Kale, washed and chopped into 1 inch pieces
½ can of white beans such as Cannellini, drained and rinsed
1 cup of penne pasta
2 cloves garlic, minced
1 tsp. fresh thyme, chopped
1/8 tsp. red pepper flakes
Juice from ½ a lemon
1 tbsp. olive oil
Salt and Pepper
¼ cup Parmesan Cheese

Cook the penne according to package directions until el dente, drain and set aside.

In a large skillet heat 1 tablespoon of olive oil over medium high.

Remove the sausage from its casing and sauté until well browned and cooked through.
Add in the beans and garlic and cook for 1 minute until fragrant.
Toss in the kale and cook for 1 or 2 minutes until it is wilted.
Season with the thyme, pepper flakes, lemon juice and salt and pepper.

Stir in the cook pasta. Toss to combine.

Sprinkle with Parmesan cheese and serve.


A perfect dinner and I managed to control myself and save enough for lunch the next day!

  1. Well this looks yummy, I have to admit when I heard chicken sausage I was like uh, hmmm....but this looks and sounds divine! Must try! Thanks for a great recipe I would have never thought to try! :)

  3. This is what you call healthy food. Having sausage, white beans, and kale in your ingredients will let you create a hale and hearty dish. It looks yummy and I can't wait to try this recipe! I'm thinking of adding some spinach to make it more aromatic. What do you think?
