Mini Ice Box Cakes



I whipped up this super simple but totally gorgeous dessert for Valentine’s Day. You totally don’t need to wait for a special occasion to make these sweet little cakes, any Monday will do!



These Mini Ice Box Cakes are so simple you only need 4 ingredients, plus sprinkles!


What you need,

1 cup heavy cream
1½ tbsp. icing sugar
½ tsp. vanilla extract
1 (200g) box of Nabisco’s Chocolate Wafer Cookies
Sprinkles

In the bowl of a stand mixer fitted with the whisk attachment, whip the cream, icing sugar and vanilla until medium peaks form.

To assemble the cakes, spread 2 teaspoons of whipped cream on top of a cookie. Layer on another wafer to make a sandwich. I went 4 cookies high but you could do more if you like.

Place the mini cakes on a large tray and put them in the fridge for 4 hours or overnight. The longer you leave them the softer the cookies will be, I did them overnight.

Just before serving sprinkle on your choice of colorful sprinkles.
I did a few with hearts for V-Day but any cute sprinkles would work.

This made 6 mini cakes, you could double the cream, sugar and vanilla if you want to do more cakes. I used about ½ the package of cookies so there would be plenty in the pack to double the recipe.



These little cakes are amazing! The cookies get soft and cakey; they aren’t too sweet, just perfect!
