Roasted Vegetable Salad


Now that you have a big pan of Roasted Vegetables waiting to be eaten I suggest you start with this salad



AMAZING! For real people you will love it! Simple and healthy, a perfect lunch or dinner.




What you need,

For the dressing,

3 tbsp. cider vinegar
1 tbsp. maple syrup
1 tbsp. grainy mustard (you could use Dijon if you like)
2 tbsp. extra virgin olive oil
½ tsp. dried thyme

For the salad,

1 bag mixed greens, I like a spinach blend
1 small bunch of kale, trimmed and chopped into bite sized pieces
2-3 cups of Roasted Vegetables
Goat Cheese for topping (optional, but not really‼)

To make the dressing, whisk together all the ingredients in a small bowl. Adjust the seasoning to your taste, if you want a little sweeter add more maple syrup, add some salt and pepper if you like.

In a large bowl toss the mixed greens with the kale and set aside.

To assemble the salad, toss the greens with the dressing. Pile the dressed greens onto a plate, top with a big scoop of the roasted veggies. Crumble some of the goat cheese on top.



We loved loved loved this salad. My in house taste tester hates goat cheese so he left it off but he did eat 2 full plates of this healthy dinner, as did I! For me the goat cheese really makes this salad, a little salty and tangy with the warm crisp veggies… ahhh I am drooling just thinking about it!

  1. This is SO GOOD! Katie made it this summer when she was home, and oh, how yummy!! I don't recall it having maple syrup but it may have had it. I have made this many times since, just using a simple oil&viniger dressing, because it's easier ;) Thanks for another great recipe!!
