Chicken Salad Sandwich

I had a hankerin' today for a good old Chicken Salad Sandwich. Chicken Salad is my second favorite sandwich just a hair behind the classic grilled cheese! Seriously you can't compete with a grilled cheese.

I know that chicken salad is one of those things everyone makes just a little bit differently, some people like classic mayo and celery and others like to load it up with dried fruit and nuts! I don't think it matters how you make it Chicken Salad is yummy!

Here is the version I whipped up for dinner,

2-3 cups cooked chicken breast, cooled and diced
(I used a rotisserie deli chicken from the Safeway but you could totally cook your own, I was just super hungry and couldn't wait!)
2 ribs celery, finely diced
1 green onion, chopped
3/4 cup mayo, you could use Greek yogurt here if you were looking to cut fat!
1 tsp Dijon mustard, I used a heaping tsp but adjust to your tastes.
1 tbsp or so of fresh squeezed lemon juice
kosher salt and fresh ground pepper to taste
I like mine on a Croissant!

Chill the chicken and cut into bite sized pieces. Add in the celery and onion.
In another bowl stir together the mayo, mustard, lemon juice and the salt and pepper.
Pour the dressing over the chicken and mix gently.
I like to chill the whole mixture for at least 15-20 minutes. I Just like it cold, you wouldn't have to.

Slap a little mayo or butter, if you are rebel, on your croissant. Add a good amount of chicken salad and some lettuce. A perfect sandwich.

I like to serve mine with some plain Lay's salted chips, I dunno why it just feels like the right thing to do!

Oh and just a side note, it snowed here today... snow in Vancouver in April is just plain WRONG!

  2. Ok so have u ever used the greek yogurt instead of mayo?? Because I would totaly love to embrace the chicken salad sammy but can't stand the mayo!! It looks so yummy, and it is true, a good sammy with a side of yellow bag lay's chips is heaven. Snow in Regina too! At least we're not in Calgary!!

  3. How bout 20+ cm of snow on April 14th. Yes come on spring. I have a favorite chicken sandwhich at this cafe and yup served on a croisant and it has cashews and waterchestnut. Tum so good I might have to go there soon or make my own!

  4. Pam, Yes I have used greek yogurt and it is super tasty, a little tangy and super creamy! try it!
    Kate, cashews and waterchestnuts sound awesome! I am going to have to try it that way, or you can just take me there the next time I visit! Sorry about your snow! At least it didn't stick here!

  6. I love a good Chicken Salad, the coffee shop I used to manage would add red grapes to their chicken salad, as well as walnuts. I'm not a fan of nuts, but I still to this day add the grapes to my chicken salad! Yours looks fantastic, I like the idea of using greek yogurt instead, I'll have to try that! Yum!
