Lemon Sugar Cookies

I can't believe Easter is in 1 week! It was finally sunny here today so I was in the mood to do a little baking. I thought I would share some Easter treats with you this week. First off are these soft and chewy on the inside and crunchy on the outside lemon sugar cookies. These are so light and fresh. They are just lovely.
A basket of these would make anyone happy on Easter morning.

You will need,
2 3/4 cup all purpose flour
1 tsp. Baking soda
1/2 tsp. Baking powder
1/2 tsp. Salt
Zest of 2 large lemons
1 1/2 cups granulated sugar
1 cup butter, at room temperature
1 large egg
1/2 tsp. Vanilla extract
2 tbsp fresh lemon juice
1/2 cup granulated sugar for rolling cookies in.
Preheat oven to 350 degrees.
In a small bowl, whisk together flour, baking soda, baking powder and salt. Set aside.
In a stand mixer beat together butter and sugar until smooth and creamy.
Add in the lemon zest and juice, egg and vanilla extract. Mix until combined.
Gradually add in the dry ingredients.
Roll rounded tablespoons of dough into balls and roll into the sugar. Place on silpat lined baking sheets about 1 1/2 inches apart.
Bake 8-10 minutes or until cookies are lightly browned around the edges.
Remove from pan and place on a cooling rack.
