Nachos



Who doesn’t love nachos?? They are a great snack for watching the game or to serve at parties with a nice cold margarita. They are even great to just whip up for a quick for dinner!



I love me some nachos‼



What you need,

1 bag nacho chips (I really like the Tostitos Cantina chips)
1 lb. ground beef
2 tbsp. homemade taco seasoning (or a package)
¾ cup water
3 green onions, sliced
¼ cup pickled jalapenos, chopped
2 cups grated cheese, I used a blend of jalapeno cheddar and regular cheddar, any kinds you like would work
1 avocado, diced
Sour cream and Salsa for serving

In a large skillet over medium high heat brown the ground beef. Once the beef is fully cooked, drain off any excess fat. Stir in the taco seasoning and water. Let the mixture simmer for about 15 minutes until all the liquid has absorbed.

Meanwhile heat your oven to 400 degrees.
Line a baking sheet with parchment paper.

Put a single layer of taco chips down on the parchment. Sprinkle on half the beef mixture, half the green onions, half the jalapenos as well as half the cheese.
Add a second layer of nacho chips and then the rest of the beef, green onion and jalapenos. Top with the rest of the cheese.

Bake for 12-15 minutes until all the cheese is melted and the chips are crisp.

Serve with the chopped avocado, sour cream and salsa.



What I love most about nachos is you can layer on whatever you like, how about some black beans, or kidney beans. Fresh tomatoes or jalapenos, maybe some black olives?? Even some roasted corn would be awesome.

Nachos make a quick and delicious dinner or snack!
