I
have seen a lot of recipes lately for Comeback Sauce. It is a condiment found
mostly in the southern USA. They use it as a dip or salad dressing.
It
sounded amazing so I thought I would give it a try.
I
am addicted to fries, skinny or fat, fried or baked; if it’s a fry I will eat
it.
This
comeback Sauce is crazy good on fries!
The
oven potato wedges are simple and delicious and dipped in the sauce, you just
can’t go wrong.
What
you need,
For
the Comeback Sauce,
1
cup Mayo
¼
cup ketchup
¼
cup Chili Sauce (I like Heinz)
1
tbsp. yellow mustard (you could use Dijon if you like)
1
tsp. onion powder
1
tsp. garlic powder
2
tsp. Worcestershire sauce
1
tsp. fresh ground black pepper
¼
tsp. tobacco
The
juice of 1 lemon
(If
you want to make it into a salad dressing use up to ¼ cup of olive oil to thin
it out)
Whisk
together all the ingredients until well combined. Cover and chill for at least
6 hours, overnight is better.
Keep
extra sauce in an airtight container in the fridge for at least 2 weeks.
For
the potato wedges,
2
large russet potatoes
2
tbsp. olive oil
1
tsp. seasoning salt
½
tsp. fresh ground black pepper
½
tsp. garlic powder
Heat
the oven to 425 degrees. Pour about 1 tablespoon of olive oil on a sheet pan
and rub to coat the whole pan.
Cut
each potato in half lengthwise, slice each half in half. If the potatoes are
huge you may need to cut the halves into half again to create ¼ inch thick
wedges.
In
a large bowl toss the wedges with the second tablespoon of olive oil. Season
the potatoes with the seasoning salt, pepper and garlic powder.
Lay
the wedges in a single layer on the prepared pan.
Bake
the wedges for 15 minutes or until the potatoes are brown and crisp on the one
side. Flip the wedges over and bake another 15 minutes until fork tender.
You
may need to turn your oven down to 350 after about 5 minutes on the second
side. You want the potatoes to get brown and crisp but you want them to cook
through before burning.
Just
gauge your oven.
Serve
right away with the Comeback Sauce.
What
can I say… look at these beauties.
The
sauce is spicy and sweet, AH-MAZING!
We
had BBQ’d Burgers as well and I slapped some of this sauce on my burger, it was
to die for!
It
would be a great salad dressing for a wedge salad or a hearty spinach salad.
