Santorini Salad



My friend Brenda and I went to Moxie’s the other night for dinner. She hasn’t been home for a visit in a long time so we were out catching up!



I had this Santorini Salad for dinner, it was so amazing I knew I needed to try and recreate it at home.



It has salty olives, soft cheese, crunchy croutons and a light slightly sweet but tart dressing.



What you need,

4 cups mixed baby greens
½ cup sliced cucumber
½ cup grape tomatoes
¼ cup mixed, pitted olives
¼ cup baby mozza cheese (bocchini)
2 tbsp. crumbled feta cheese
½ cup multi grain croutons

For the dressing,
4 tbsp. red wine vinegar
3 tbsp. extra virgin olive oil
2 tbsp. canola oil
1 tbsp. honey
1 tsp. salt
½ tsp. pepper

In a small jar combine the red wine vinegar, both oils, honey, salt and pepper. Shake well to combine, about 30 seconds.
Set aside.

In a large bowl combine the baby greens, cucumber, tomatoes, olives, baby mozza, feta cheese and croutons.

Drizzle on 3-4 tablespoons of the dressing and toss to coat.

Serve right away.



This salad is absolutely delicious. It has so many flavours and textures. 
It made a perfect summer dinner!

  1. This looks perfect!! It has been so hot here and heavy hot meals are such a turn off! This fresh yummy salad will be a great addition to my salad supper line up!! Can't wait to try it!! Thanks for another great recipe!!
